SUMMER SANDWICH
This is the most delicious summer sandwich when made with fresh garden tomatoes.

4 medium crusty rolls
4 large ripe tomatoes, sliced round
1 red onion, sliced round
3/4 pound kasseri cheese, thinly sliced or Feta cheese
1 cup kalamata olives pitted
1 teaspoon dried oregano
2 tablespoons fresh flat parsley, chopped
salt
2 tablespoons olive oil


Directions:

Slice the bread rolls lengthwise partially through. Lightly toast. Layer with tomatoes, onion, cheese, olives, oregano, salt, parsley; drizzle with olive oil on top. Close up the rolls and press it together. Serve this delicious sandwich for the summer with fresh tomatoes.
