Directions:
Wash and trim the green beans (string if necessary). Cut them in half, wash and drain. In a large sauce pan, heat oil over medium and sauté the onion and garlic. Add green beans and sauté for 7 to 8 minutes. Add the tomatoes and 1½ cups water. Cook for 30 to 40 minutes. Add zucchini, parsley, mint, salt, and pepper, and more water if necessary. Cook for 25 minutes or until beans and zucchini are tender. Remove from the heat; let stand 10 minutes
