CAULIFLOWER STEW WITH ONION
This is a delicious vegetarian dish.

2½ to 3 pounds cauliflower
4 tablespoons olive oil
7 to 8 small whole white onions
3 cloves garlic, sliced
1½ cups fresh peeled tomatoes, crushed (or canned whole or crushed tomatoes)
1½ teaspoon tomato paste
1 cinnamon stick
2 bay leaves
1 small spring of fresh rosemary
salt and pepper
1 tablespoon vinegar


Directions:

Clean the cauliflower and cut into large pieces. Rinse with cold water and pat dry. In a large pot heat olive oil; add the cauliflower and sauté until lightly brown. Remove from the pot and place on a large platter. Add onions and garlic to the pot and sauté for 5 minutes. Add tomatoes, tomato paste, cinnamon, bay leaves, rosemary, salt, pepper, vinegar and 1 cup water. Cover and let it simmer for about 10 minutes. Add the cauliflower back to the pot with the sauce. Add more water if necessary. Cover and let it simmer for 25 to 30 minutes or until cauliflower is tender. Remove from the heat and place into a platter. Discard cinnamon, bay leaves and rosemary. Can be served hot or cold.
