Pizza with Artichokes and Feta Cheese
The artichokes and feta cheese give this pizza a delicious, unique flavor.

1 recipe basic pizza dough
3 to4 plum tomatoes, peeled, seeded, and chopped
2 tablespoons finely chopped fresh basil
3 cloves garlic, chopped
½ teaspoon grated parmesan cheese
2 tablespoons dried oregano
Salt and pepper
2 (14 ounce) cans artichoke hearts, drained and diced
½ pound feta cheese, diced
1 tablespoon olive oil


Directions:

Preheat the oven to 400 degrees. Lightly brush a pizza pan with oil. On a lightly floured surface, roll out the dough into a circle, place in the pizza pan and push up the edges to make a thin rim about ¼ inch high. Cover and let rise for 25 to 30 minutes. In a medium bowl, combine tomatoes, basil, garlic, cheese, oregano, and salt and pepper to taste; mix well. Spread the tomato mixture evenly over the pizza, arrange the artichoke hearts on top, and sprinkle with the diced feta. Drizzle with a little olive oil and bake for 15 to 20 minutes, or until edges are golden brown. Serve hot.
