DELICIOUS PORK KABOBS
A delicious dinner to enjoy with family and friends.

3 to 3½ pounds lean pork, cut into 1½ inch cubes
2 medium green bell peppers, seeded, cut into 1½ inch squares
1 large onion, cut into 1½ inch squares
12 cherry tomatoes

Marinade:
¼ cup olive oil
juice of 1 lemon
½ cup white wine
3 garlic cloves, minced
1 tablespoon fresh oregano, chopped
1 teaspoon dry thyme
2 bay leaves, crushed
salt and fresh ground pepper


Directions:

Place pork into a large bowl. In a separate medium bowl, mix the oil, lemon, oregano, thyme, bay leaves, salt and pepper. Pour marinade over the pork; stir to coat with marinade. Cover and refrigerate for 4 up to 12 hours. Preheat grill. Remove meat; reserve marinade. Thread pork, peppers, onions, and tomatoes, alternating, on each metal skewer leaving space between each piece. Brush with the remaining marinade. Cook, turning and basting occasionally, for 12 to 15 minutes until the pork is tender. Remove from the grill, place onto a platter. Serve with rice pilaf and salad. Great with red wine.
