CHICKEN CROQUETTES
These delicious chicken croquettes make a great pocket sandwich - just add lettuce, tomatoes, onion, and tzatziki sauce. If you want to try a different type of sandwich, try this - you're going to love it!

1½ pounds chicken breast cut into very small pieces
1 onion, grated
2 tablespoons fresh parsley, chopped
1 tablespoon fresh mint, finely chopped
3 cloves garlic minced
1 egg white
½ cup soft breadcrumbs
1 teaspoon dry oregano
salt and pepper
½ cup olive oil for frying
¾ cup flour
parsley for garish


Directions:

In a medium bowl, combine chicken, onion, parsley, mint, garlic, breadcrumbs, egg, oregano, salt and pepper; knead all together. Cover and refrigerate for 1 hour. Take small quantities of the mixture and form into flat croquettes; flour them lightly. Heat the oil in a large frying pan over medium heat. Fry croquettes on both sides until golden brown; drain on paper towels. Place onto a platter and garnish with parsley springs or serve in pita bread.
