Directions:
In a medium bowl, combine chicken, onion, parsley, mint, garlic, breadcrumbs, egg, oregano, salt and pepper; knead all together. Cover and refrigerate for 1 hour. Take small quantities of the mixture and form into flat croquettes; flour them lightly. Heat the oil in a large frying pan over medium heat. Fry croquettes on both sides until golden brown; drain on paper towels. Place onto a platter and garnish with parsley springs or serve in pita bread.
