CHICKEN KABOBS WITH WHOLE CLOVES OF GARLIC

This a great Mediterranean dish with lots of garlic, which becomes mild and sweet when grilled, so you can eat them with enjoyment.

1 ½ to 2 pounds boneless, skinless chicken breast, cut into large chunks

20 to 24 whole cloves of garlic

Marinade:

Juice of 2 lemons
¼ cup olive oil
1 teaspoon finely chopped rosemary
1 teaspoon paprika
1 tablespoon chopped fresh oregano
4 cloves garlic, finely chopped
Salt and freshly ground pepper to taste


Directions:

In a large bowl combine lemon juice, olive oil, rosemary, oregano, garlic, salt, and pepper to taste. Add chicken and stir to coat with the marinade; cover and refrigerate for 3 hours. Remove the chicken and discard marinade. Thread 1 piece of chicken onto skewer, add 1 clove of garlic; continue, alternating chicken and garlic cloves. Preheat grill and brush with olive oil. Grill kabobs over medium heat for about 12 minutes on each side, turning chicken, until no longer pink. Serve with pasta and salad.

Serve 5 to 6.
