Baked Chicken Meatballs w/Sun Dried Tomatoes & Basil

1½ - 2 pounds ground chicken breast
2 tablespoons olive oil
1 large onion, grated
3 cloves garlic, finely chopped
½ cup sun dried tomatoes, with olive oil, drained and chopped
2 tablespoons fresh basil, finely chopped
1 tablespoon fresh flat parsley, chopped
¾ teaspoon dried mint
½ cup plain bread crumbs
1 egg slightly beaten
Salt and pepper


Directions:

Preheat the oven to 375 degrees. In a medium skillet heat the olive oil and sauté the onion and garlic for 2 minutes or until softened. Remove from the heat and let cool for 10 minutes. In a large bowl place the ground chicken. Add the onion mixture, sun tomatoes, basil, parsley, mint, bread crumbs, egg, salt, and pepper. Knead until ingredients are well mixed. Cover and refrigerate, for 1 hour. Take a heaping tablespoonful, of the mixture, and shape it into a meatball, and roll between the palms of your hands to shape. Place the balls ½ inch apart on a greased cookie sheet and bake for 40 to 45 minutes and turn once until browned. Remove from the oven and stand for 10 minutes.

Serve with Greek salad and Yogurt cucumber sauce or serve as appetizer.

Yield 2 to 2 ½ dozen.
