STUFFED HAMBURGER WITH FETA CHEESE
This recipe makes a unique and delicious Greek version of the classic hamburger.

1½ pounds lean ground beef
1 large onion, grated
3 cloves garlic, crushed
2 tablespoons finely chopped fresh flat parsley
½ cup plain breadcrumbs
1 teaspoon dried oregano
Salt and pepper to taste
½ pound Feta cheese, sliced
5 hamburger buns
2 large tomatoes, sliced round
1 red onion, sliced round
1 tablespoon chopped parsley


Directions:

Preheat the grill.

In a large bowl combine the meat with onion, garlic, mint, parsley, breadcrumbs, oregano, salt and pepper. Knead with your hands to mix all ingredients together. Cover and refrigerate for 1 hour. Divide the meat mixture into 8 portions; flatten into large patties. Place slices of feta cheese on 4 patties and then place the remaining patties on top, pressing around the edges to seal very well. Grill each patty for 6 to 7 minutes on each side for medium rare or until desired doneness. Brush buns with olive oil, place on the rack cut side down and grill until golden brown. Place each burger on the bottom half of toasted bun and top with slices of tomatoes and onions; sprinkle with parsley, and cover with the top bun. Serve hot with home made fried potatoes.
