SPAGHETTI WITH TOMATO SAUCE
This is a wonderful thick sauce to use as the basis of other recipes as you like.

¼ cup olive oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
1 can (28 ounces) whole peeled tomatoes, chopped with juice
1 tablespoon tomato paste
1 tablespoon fresh mint, chopped
¼ teaspoon dry oregano
Salt and pepper to taste
1 pound spaghetti or any type of pasta
½ cup grated Kafalotyri or Parmesan cheese


Directions:

Prepare pasta according to the package directions and drain. In a large saucepan, heat the oil; sauté onion and garlic for 5 minutes. Add tomatoes, tomato paste, basil, mint, oregano, salt, and pepper. Add ½ cup water, cover and let the sauce simmer for about 30 minutes, stirring occasionally with a wooden spoon. Place pasta on a warm platter; cover with the sauce and sprinkle with the cheese. Garnish the top with basil and mint. Serve hot with salad.
