POTATO AND CHICKEN SALAD
This delicious salad is great for lunch or dinner with pita bread.

2 cups cooked chicken breast, cut into cubes
2 cups cooked potatoes, cut into cubes
2 medium tomatoes, skinned and cut into cubes
1 cucumber, peeled and cut into cubes
1 small red onion, chopped
1 small green bell pepper, chopped
1½ tablespoon fresh flat parsley, chopped
10 Kalamata olives for garnish

Dressing:
¼ cup olive oil
3 tablespoons red wine vinegar
½ teaspoon dried thyme
½ teaspoon dried oregano
1 clove garlic, crushed
Salt and pepper to taste


Directions:

In a large salad bowl combine chicken, potatoes, tomatoes, cucumber, onion, pepper, and parsley; mix all ingredients together.

In a small jar mix oil, vinegar, oregano, thyme, garlic, salt and pepper to taste. Pour dressing over the salad and garnish with olives.

Serves 4.
