Chicken Burgers with Mint and Sun Dried Tomatoes

1 ½ pounds extra lean ground chicken breast
1 small onion, finely chopped
2 cloves garlic, finely chopped
½ cup sun dried tomatoes, chopped
2 tablespoons fresh mint, finely chopped
2 tablespoons grated parmesan
½ cup plain breadcrumbs
1 tablespoon olive oil
Salt and pepper
1 large red onion, cut into ½ inch round slices
2 tablespoons olive oil for brushing the bread


Directions:

Preheat the grill.

In a large bowl, combine chicken with onion, garlic, sun dried tomatoes, mint, parmesan, bread crumbs, olive oil, salt, and pepper. Knead by hand to mix all ingredients. Shape mixture into 4 patties about ¾ inch thick. Cover and grill patties 4 inches from medium heat for 15 to 18 minutes, turning, until no longer pink in the center. Brush the red onion slices with olive oil and grill them for 8 to 10 minutes, turning once, until golden brown on each side. Brush bread slices with olive oil on both sides and grill, turning until golden brown. Serve burgers and onions between bread slices.

Burger Tips:

  1. If you dampen your hands with water before forming the hamburgers patties, the meat won't stick to your hands.
Don't press down on the hamburger patties with a spatula while they're grilling; you'll squeeze out all the flavorful juices.
