ROAST RACK OF LAMB WITH LEMON
This dish is easy to prepare and Delicious with nice glass of wine.

1 rack of lamb with 8 chops
¼ cup olive oil
4 garlic cloves, minced
1 tablespoon fresh oregano, chopped
1 teaspoon fresh rosemary, chopped
½ teaspoon dry thyme
juice of 2 lemons
2 bay leaves crushed
salt and pepper


Directions:

Preheat oven to 350 degrees F.

Wash the lamb; pat dry and place into a large bowl. In small bowl, combine oil, garlic, oregano, rosemary, thyme, lemon juice, bay leaves, salt and pepper. Mix all ingredients very well. Pour the marinade over the lamb and turn 2 to 3 times. Cover and refrigerate for 6 hours. Place lamb into a roasting pan with marinade and roast for 1½ hours or until lamb is cooked to your likeness. Baste often during cooking. If it's too dry, add a little water into the pan. Remove from the oven and let stand for 10 minutes. Cut into individual chops and serve on a platter with lemon slices. This dish is great with rice and salad.
