Grilled Beef Steaks with Wine Marinade

3 T- bone steaks or steak of your choices, ¾ inch thick, 10 to 12 ounces each

Marinade:

1½ cups dry red wine
3 tablespoons olive oil
4 cloves garlic, crushed
2 tablespoons chopped fresh oregano
1 teaspoon chopped fresh rosemary
1 bay leaf, crushed
Salt and fresh ground pepper


Directions:

Wash the steaks and pat dry. Place into a shallow glass dish. In a medium bowl combine the marinade ingredients and mix well. Pour marinade onto the steaks, turning to coat. Cover and refrigerate for 4 to 6 hours, turning occasionally. Preheat the grill. Remove steaks from dish and discard any remaining marinade. Put steak on grill 4 to 5 inches apart on medium heat. Grill, turning once, for 12 to 14 minutes for medium doneness. Remove from the grill and let stand for a few minutes before serving.

Serving: By allowing the steaks to stand for a few minutes, the meat juices which have been driven to the center of the meat by the searing heat can return to the surface. And then you get a nice juicer and tastier steak.
