GRILLED CHICKEN BEEFEKI

Another easy and light dish for dinner. A great 30 minute meal.

1 to 1½ pounds ground chicken breast
1 large onion, grated
1 large tomato peeled, seeded and chopped
3 cloves garlic, minced
2 tablespoons fresh basil, finely chopped
1 tablespoon fresh parsley, finely chopped
½ teaspoon dry oregano
1 tablespoon lemon juice
1 egg white, lightly beaten
½ cup plain bread crumbs
salt and pepper


Directions:

In a large bowl, combine chicken, onion, tomato garlic, basil, parsley, oregano, lemon juice, egg white, bread crumbs, salt and pepper. Mix everything very well with your hands. Cover and refrigerate for 1 hour. Preheat grill. Make 4 to 5 large meat patties. Oil the grill. Place patties on grilling rack and cook for 10 minutes on each side or until chicken patties are cooked. Remove from the grill and place on a platter. Serve with tzatziki sauce, rice pilaf, and salad.
