MARINATED OLIVES
This delicious recipe comes from my mom's kitchen. She would prepare this delicious recipe by using her own olives from the olive trees in our back yard.

1 pound Kalamata olives
1 pound green Greek olives
3 to 4 garlic cloves, crushed
1 teaspoon fresh rosemary, chopped
1 teaspoon dry oregano
1½ teaspoon fresh thyme, chopped
1 bay leaf, crushed
1 lemon, sliced
¼ cup red wine vinegar
½ cup olive oil


Directions:

Place olives into a colander and rinse with cold water 2 to 3 times. Let the water drain and place into large bowl. In a medium bowl, combine garlic, rosemary, thyme, bay leaves, lemon slices, vinegar, and olive oil. Mix very well. Pour mixture over the olives; mix all very well. Place olives with marinade in a large bowl and serve as an appetizer.

Serves 5 to 6.
